"Adding kimchi is an easy way to elevate the classic grilled cheese sandwich and give it more punch that takes it from snack to meal. Draining as much liquid from the kimchi as possible will make the sandwich less likely to go soggy on you, plus you can take that spicy liquid to whip up a simple side salad! I would highly recommend using homemade kimchi for this recipe."
